COOKBOOK OF BEĆARAC AND GANGA
The cookbook of Bećarac and Ganga is a collection of recipes stemming from Duvno in Bosnia and Herzegovina and Pleternica in Croatia. An essential and compelling of the culture and cuisine of these two distant yet connected regions, crossing borders and time. We have worked with Muze and the Tourist boards of Tomislavgrad and Pleternica to bring these ubiquitous recipes to life. The cookbook includes over 50 authentic recipes, documented by Radovan Marčić, the writer and food critic, in collaboration with families and restaurateurs of Pleternica and Tomislavgrad regions. Besides the programmatic cooking precision, each recipe tells a story about the dish and how it is being interpreted today.
The whole initiative stems from the Cultural route of Bećarac and Ganga — which aims to connect and preserve these specific micro-cultures of Slavonia and the south of Bosnia and Herzegovina. These two regions are connected through their specific musical characteristics, stemming from bećarac, a humorous form of folk song, and ganga, a type of singing originating from the rural Dinaric mountain region. The design itself speaks to the duality of the cultural route — the cookbook doesn’t have one start or end — one side starts with Pleternica, and the other with Tomislavgrad, and both of them end in a collage of visuals, people, food and culture from these regions.
